Broccoli Salad

 

This delicious recipe is my own version of a recipe I received from a good friend when we lived in upstate New York.  As a more experienced mom, 3 grown children and nine grandchildren, she taught me so much about the joy of entertaining.   Often her home is filled with family and friends who enjoy simple dishes in a relaxed and fun atmosphere. 

My entire family loves this broccoli salad.  They usually asks for second helpings.  It is a great side dish for a picnic or party.  It is packed with vitamins, calcium and fiber. 

 

Salad Ingredients

 4 cups broccoli florets

1 cup cashew pieces

1 cup dried cranberries

½ small red onion, chopped (optional)

8 slices bacon, cooked and crumbled

 

Dressing Ingredients

 1 cup mayonnaise

1/8- 1/4 cup sugar

3 T apple cider vinegar

 

Directions

1.  Combine broccoli, cashews, dried cranberries, onion, and bacon in bowl

2.  In small bowl, combine mayonnaise, sugar, and apple cider vinegar.  Stir until smooth.

3.  Immediately before serving add dressing to salad ingredients.  Stir gently to thoroughly combine.
