Kale Salad with Parmesan Cheese

This is a delicious salad that goes well with soup and sandwiches.  Make it early in the day and allow it to marinate all day. 

My kids and husband love this recipe and always ask for seconds.  Kale is one of the best foods for cancer prevention and the lemon provides a great dose of Vitamin C.


1 large bunch kale
juice of 1 lemon
1/2 c. extra virgin olive oil
2 tablespoons minced red onion
ground sea salt, to taste
freshly ground black pepper, to taste
1/2 c. freshly shredded Parmesan cheese


  1. Slice kale leaves into very thin strips. 
  2. In small bowl, whisk together lemon juice and olive oil.  It should have a cloudy appearance when it is completely combined.  Add red onion, sea salt and black pepper.
  3. Pour over kale and add parmesan cheese
  4. Allow to marinate in refrigerator for 3 hours or more
