Cream Cheese Cookies

I received this recipe from a special friend after she made these cookies for our family.  The cookies are so moist and delicious, far better than any sugar cookie I’ve tried.  My kids love decorating and eating the cookies.  They are a favorite in our home.

1 cup butter soft, but not melted

3 oz cream cheese, room temperature

1 cup sugar (I use about 3/4 cup)

2 egg yolks

1/2 teaspoon vanilla

2 1/2 cup flour

Cream butter and cream cheese together until smooth. Add sugar and beat until sugar is

dissolved in the batter. Add egg yolks and vanilla and beat until smooth. Add flour 1/2 cup at a time.

Note: I usually finish adding the flour by using a wooden spoon because the batter will be stiff. The dough should not be sticky to work with.

Chill dough for 30 min. Using a floured rolling pin and surface, roll out dough to about 1/4 in.  Handle dough very lightly when rolling.

Using cookie cutters, cut into fun shapes.

Bake at 375° for about 10 minutes or until the bottom of the cookies are lightly browned.

Ice with your favorite frosting and let the children decorate.
